La Capilla Womens Guatemala
La Capilla (the little chapel)
Farmers David and Lillian, whom we buy all Guatemalan coffees directly, named it so we kept that name. The varietal that sits on that land is called Pache. It's a varietal that's native to Guatemala and therefore it grows best there. We roast it lightly to accentuate its beauty. Still leaning towards milk chocolatey softness with a defining smooth velvety mouthfeel leading with notes of butterscotch and white peach. It's not your typical light roast yet for a Guatemalan coffee, it does rival high grown acidic coffees with a much more pleasant acidity.
We've had this coffee in 2022 but this year we decided to bring it back because it's extra special. This year it was harvested by only women who work on the property in Santa Marta. So let's celebrate how good this coffee is while we have it! Try it with cream and sugar too! Its delicious!
